What you'll need:

4 Calypso® mangoes peeled and chopped roughly

165ml white wine vinegar

100g brown sugar

1 onion

4 cloves garlic

1 tsp ground ginger

1 star anise

1 red chilli, deseeded

Pinch of salt

Julienne peel of 1 orange

Juice of 1 lime

How to make it:

  1. In a large pot bring all ingredients, except lime juice and mangoes, to a boil and reduce liquid by half.
  2. Add mangoes and lime and cook for a further 5-10 minutes until the consistency is thick and syrupy.
  3. Pour into a sterilized jar and cap. Turn jar upside down in the sink and leave for 10 minutes.
  4. Turn back over and allow to cool on the bench overnight.

Can be stored for up to 3 months
