What you'll need:

3 Calypso® mangoes peeled and thinly sliced

Juice of ½ lime

160g caster sugar

600ml cream

½ tsp vanilla extract

12 store-bought meringue nests

Store-bought mango gelato or sorbet

Mint leaves to garnish

How to make it:

  1. In a bowl, toss half of the mango slices with half of the caster sugar and lime juice and let stand for 10 minutes. Puree, strain and reserve the juice.
  2. In another large bowl, whisk the remaining caster sugar with the cream and vanilla essence until light and fluffy. Roughly crush the meringues.
  3. In 6 glasses, place some mango slices at the base with a couple tablespoons of the puree liquid over the top.
  4. Add a couple of spoonfuls of the whipped cream then a layer of crushed meringue and a scoop of mango sorbet.
  5. Repeat the layers again and garnish with fresh mint.
