What you'll need:

1 large Calypso® mango

1/2 cup coriander leaves, chopped

1 fresh lime, rind finely grated, juiced

1 long red chilli, deseeded and finely chopped

2 tsp fish sauce

How to make it:

  1. Peel and dice the mango, place in a bowl and stir in the herbs. Combine the lime rind, juice, chilli and fish sauce. Pour over the mango and stir gently to combine.
  2. Allow to stand in the fridge for 30 minutes to allow the flavours to develop.
  3. Serve over roast chicken, turkey, pork or seafood.

Salsa will keep in an airtight container in the refrigerator for 1-2 days.
